Autumn/Halloween Cookies

Ingredients:

200g  Butter (Room Temperature/Slightly Softened)

200g Caster Sugar

360g Plain Flour

1 ½  tsps Pumpkin spice mix, vanilla essence or other flavouring (if you like spicier cookies then add 2 teaspoons.

1 Egg

The size of cutters you use will affect the amount of cookies this makes! But approximately 20-30.

Method

Cream the sugar and butter together with a mixer.

Add the egg and your choice of flavouring and mix this until combined.

Mix in your flour slowly with a wooden/plastic spoon or spatula, a spoonful at a time. Mix until your dough is well combined and the consistency of roll out cookie dough. At this point I like to refrigerate it for 20 minutes to firm it up at little before rolling.

Roll out your cookie dough on a lightly floured surface, to a thickness of about 5mm. Then cut out your shapes placing them on a sheet of parchment paper.

Now here comes an important step! Place a baking tray with the parchment paper and the cut out cookie shapes in the fridge for 10-20 minutes to chill them down again. This reduces the spread of the cookie whilst baking and helps keep them in shape!

Then take your baking tray from the fridge and place into a preheated oven at 180°C or 356°F (gas mark 4). For about 10 minutes, until the edges start to go slightly golden in colour. If you have several batches you will either need multiple baking trays or to make sure your baking tray is cool before adding your next batch of cookies. If you’re not worried about the shapes then you don’t need to worry with this step!

Place your cookies on a wire rack to cool.

You can decorate them however you wish! We used glace icing, icing pens, melted chocolate and lots of sprinkles!


OPTIONS:
If you don’t have any cookie cutters, why not make little flattened balls of dough and press the tines of a fork across the top. Then when they are cooked you can decorate them with icing pens to look like Monster Paws! (See pictures)

Don’t fancy baking but still want a sweet treat? Why not use cookie cutters to cut shapes out of pre-made pancakes (see pictures), then decorate them however you wish! You could even have a spooky breakfast with pancake ghosts flying through scrambled egg clouds…

 

Don’t forget to store any uneaten cookies in an airtight container in a cool dry place.

They’ll last for up to a week … maybe.. if you forget about them!!
